Features

The La Bella della Daunia PDO olive is large in size, has abundant green or black pulp. Of elongated shape (similar to a plum), it is characterized by a thin film and a full and tasty taste.

Article 1
The protected origin denomination "La Bella della Daunia" and reserved for green and black table olives which correspond to the requirements and conditions established by Reg. (CE) n.510 / 2006 and by this production specification.

Article 2
The protected designation of origin "La Bella della Daunia" refers to the green and black table olives produced in the area defined in the following art. 3 of this specification obtained from the olive variety "Bella di Cerignola".

Article 3
The production area of ​​the protected designation of origin "LaBella della Daunia" referred to in this specification, includes the province of Foggia, part of the municipal areas of Cerignola, OrtaNova, Stornarella and Trinitapoli and the entire countryside of San Ferdinando and Stornara.
The border that delimits the territory suitable for the cultivation of the "La Bella della Daunia" table olive extends from the west to the far south:

Article 4
The cultivation system must be the one traditionally adopted in the area, strongly linked to the peculiar geographical and pedoclimatic characteristics.
The annual pruning system, the cultivation and sextidimplant forms are the traditional ones of the area, with a maximum number of plants 420 / Ha, also associated.
The olives are harvested directly from the plant, starting from October 1st; for green olives when the leaf begins to change from leaf green to straw green with well-pronounced lenticels, for black olives when the olives are turned or ripe with a vinous red color.
To avoid contact of the olives with the ground, sheets must be used.
Irrigation must end 10/15 days before harvesting in order not to damage the drupes (dents) which are too turgid and delicate.
Transportation must be done appropriately to avoid damaging the fruit. Suitable diplomatic cassettes must be used for this.
The maximum allowed production of olive trees per hectare allowed atutela must not exceed 150 quintals / It has a specialized or non-specialized culture (in this case it means the production leveled) The green olives «La Bella della Daunia» in D.O.P. undergo a transformation process with the Sivigliano System which is described below: the olives after calibration are treated with alkaline lye (sodium hydroxide), the concentration of which may vary from 1.7% to 4.0% (w / v), according to the ripening of the olives, the temperature, the quality of the water. The treatment is carried out in containers of variable capacity, ensuring that the solution completely covers the fruits and stops when the lye has penetrated to about 2/3 of the thickness of the pulp. This processing phase lasts from a minimum of eight hours to a maximum of fifteen hours. Olives must be constantly covered with water to avoid oxidation.
After the treatment with the alkaline lye, washes are made with water to eliminate the sodium solution. Fermentation follows 30-60 days in suitable containers in which the olives must always be covered with brine which must have an initial concentration of 9% -10% which rapidly drops to around 5% due to the high exchangeable water content of the olive. If the period between the fermentation and packaging phases exceeds 6 months, then it is necessary to add ground salt in order to stabilize the brine between 8% and 10%. After fermentation, the olives are packaged in glass or tin containers, and other containers with a final brine variable from 3% to 5% and with pH 4.6; pasteurization follows.
The black olives "La Bella della Daunia" to D.O.P. undergo a transformation process with the Californian system which can take place in one of the two ways described below:
Method A): the olives are calibrated and placed in saline containers concentrated from 2.5% to 10% in inverse reason of their thickness and sheltered from the air while waiting to be processed.
Subsequently the brine is replaced with a first solution of lye (sodium hydroxide) at about 2%, to be directly ventilated or by introducing compressed air into the water.
Repeated treatments with diluted lyes followed by each aeration, facilitate penetration to the core; if necessary, the olives are treated with ferrous iron lactate gluconate solution for food up to 150 mg / kg (as a residue) for complete blackening of the fruit. Subsequently, the olives are washed, steamed and packaged in glass or tin containers and other containers that can be sterilized, with a brine of about 3% and with about 4.6 Hp. Sterilization follows.
Method B): the olives are calibrated and placed in saline brine containers concentrated from 8% to 10% in inverse reason of their thickness and sheltered from the air while waiting to be processed.
Subsequently the brine is replaced with a diluting solution (sodium hydroxide) varying from 1.3 to 2.5% approximately until the lye has penetrated to about 2/3 of the thickness of the pulp. Then several washes and aeration followed by introducing compressed air into the water. If necessary, the olives are treated with digluconate iron or ferrous lactate food solution up to 150 mg / kg olive (as a residue) for complete blackening of the fruit.
Subsequently the olives are washed, steamed and packaged in glass or tin containers and other containers that can be sterilized; the packaged product will have a final brine with a concentration ranging from 2% to 5% and a pH 4.6. Sterilization follows.

Article 5
The olive groves and processing companies suitable for the production of the "La Bella della Daunia" PDO are entered in a special list, activated, updated and kept by the inspection body in accordance with the provisions of articles 10 and 11 of reg. CE n.510 / 06.

Article 6.
Upon release for consumption, green table olives D.O.P. "La Bella della Daunia" must have the following characteristics:
the color tone must be uniform straw green with marked lenticels;
elongated shape, resembling a plum with a narrow base and an acute and thin apex;
delicacy, flavor and full and compact consistency of the pulp, thinness of the film;
weight between 6 g and 30 g;
pulp yield 80%;
fat content 15%;
2.8% reducing sugar content.
Upon being released for consumption, the black table olive D.O.P "La Bella della Daunia" must have the following characteristics:
color must be intense black outside;
elongated shape, resembling a plum with a narrow base and an acute and thin apex;
delicacy, flavor and full and compact consistency of the pulp, thinness of the film;
weight between 6 g and 30 g;
pulp yield 80%;
fat content 18%;
2,4% reducing sugar content.

Article 7
The release for consumption of the DOP "La Bella della Daunia" must take place in the following ways: the product must be put on sale in special glass containers, with a minimum drained weight of 100 g, in thermoplastic packs with a minimum drained weight of 100 g, in milk with drained weight from 180 g upwards;
plastic containers from 20 to 150 kg (for the transport of the olives from the transformers to the packers) which do not alter or transmit odors or harmful substances to the olives. The packages must be subjected to pasteurization or sterilization.
All containers must be provided with labeling corresponding to the requirements established by the various provisions of the law; the following indications will be printed in clear print characters on the label:
"La Bella della Daunia" and "protected designation of origin" (or its initials D.O.P.);
the logo of the denomination to be used in conjunction with the Protected Designation of Origin (or its initials PDO);
the name, company name, address of the manufacturer and packaging company;
drained net weight contained in the packaging expressed in accordance with current regulations.
The graphic symbol is made up of a female figure inspired by the vascular iconographic tradition formerly present in Daunia and rendered «in the negative», it is a dancer who in her left hand holds an olive branch raised from the figure.
The title "La Bella dellaDaunia" is inserted around the figure with "graceful" classic characters (in capital letters). In the pantone 872 gold-colored external frame, the wording «DOP olive from the PDO» is inserted above, the name of the cultivar is reported below: variety «Bella di Cerignola».
In the reproductions the figure is black with white strokes on a white background. It is inscribed in a double profiled circumference of Pantone 872 gold color. The first circumference shows the white color as background, the second with Pantone 872 gold color background.
Both writings are in black.
The graphic symbol will be reproduced on a self-adhesive sticker in three dimensions: with 2, 3 cm, 5 cm.
