The name "Potato della Sila" refers to the tuber of the Solanum tuberosum species, from the Solanaceae family obtained from the Agria, Desirèe, Ditta, Majestic, Marabel, Nicola varieties.

Production specification - Potato della Sila PGI
The Protected Geographical Indication "Sila Potato" is reserved exclusively for the product that meets the conditions and requirements established in this production specification.
The name "Potato della Sila" refers to the tuber of the Solanum tuberosum species, of the Solanaceae family obtained from the varieties Agria, Desirèe, Ditta, Majestic, Marabel, Nicola, and which must have the following characteristics for consumption:
Shape: Round - Round / oval - Long / oval
- 28 mm. and 42 mm. (mezzanella or tondello)
- between 43 mm. and 75 mm. (before)
- over 76 mm. (Boron)
Peel: consistent after rubbing.
Pulp: consistent, without pressure sagging.
Minimum content (%):
- 19%, in the early ripening varieties;
- 20%, in medium and medium-early ripening varieties;
- 21%, in late and medium-late ripening varieties.
At the time of release for consumption, the tubers must be healthy, not sprouted, whole, clean, free of stains having a depth greater than 3 mm and / or damage caused by parasitic attacks. The presence of cuts and / or nails and / or peelings on a quantity by weight of tubers less than 5% of the total is allowed.
R.m.a. (maximum permissible residue of active ingredients) (%): less than 50% of the limit established by current legislation.
Area of origin
The production area of the "Potato della Sila" exclusively includes the territory of the following municipalities: Acri, Aprigliano, Bocchigliero, Celico, Colosimi, Longobucco, Parenti, Pedace, Rogliano, San Giovanni in Fiore, Serra Pedace, Spezzano della Sila, Spezzano Piccolo , in the province of Cosenza and the municipality of Taverna in the province of Catanzaro.
Proof of origin
Each phase of the production process must be monitored by documenting the inputs and outputs for each. In this way, and through the registration in special lists, managed by the control body, of the cadastral parcels on which the cultivation takes place, of the producers and conditioners, as well as through the timely reporting to the control structure of the quantities produced, is guaranteed product traceability. All natural or legal persons registered in the relevant lists will be subject to control by the control body, in accordance with the provisions of the production specification and the related control plan.
Characteristics of the seed tuber
The "Sila potato" must come from seed tubers certified according to national seed standards. These must be sown in the territory referred to in art. 3 for a production cycle. The use of self-reproduced seeds, for no more than one production cycle, by the producer farm is allowed.
The size of the seed potatoes must be between 28-55 mm in size.
The seed tubers must be stored in airy rooms with windows and / or with forced ventilation systems, with relative humidity higher than 80% and static temperature between 4 and 12 ° C.
Refrigeration is allowed at a temperature between 4 and 6 ° C in the period from March 1 to May 31, in order to avoid sprouting.
Pre-sprouting of seed potatoes is allowed, in order to stimulate an advance of the production cycle of tuberification. The pre-sprouting period can vary from 10 to 20 days before planting (sowing), at the end of which the shoots must reach a length of between 1 and 1.5 cm.
Manual or mechanical cutting is allowed for seed tubers larger than 45 mm, strictly respecting a period of at least 4 days of healing before planting.
Seed tanning treatments with registered active ingredients are allowed.
The land intended for the cultivation of "Sila Potato" must be prepared to facilitate the draining of the water and avoid the presence of stagnation.
Plowing must be done in the autumn in the period from 21 September to 21 December or in the spring in the period from 21 March to 21 June.
Burying straw or crop residues is allowed in order to increase the organic substance in the soil.
Soil milling is allowed.
The maximum nitrogen units per hectare must not exceed 220 units in the absence of organic matter and 150 units in the case of organic matter.
Sowing and Cultivation Technique
The "Potato della Sila" plants must be built on land where there is no solanacea for at least two previous consecutive years. In this interim period we recommend the cultivation of autumn-winter cereals, herbaria (based on legumes) and proliferated mountain meadows.
Age and characteristics of sowing
Sowing must be carried out in the period between April 15 and June 30.
A maximum density of 80,000 tubers / ha cannot be exceeded.
Irrigation, carried out with rain techniques, by sliding or drips, must be carried out from the time of tuberization by adopting volumes not exceeding 45 mm.
Unless favorable conditions, the treatments must begin at the closing of the rows and contact products must be used as a preventive measure, while in the event of attack, systemic products mixed with cytotropics or cytotropics + contacts can be used.
Pyrethroid treatment should be done on moist soil.
The "Potato della Sila" is harvested manually or mechanically by removing the tuber from the soil only in the following period: from August 20th until November 30th.
The precise time of collection is determined when the periderm is fully formed and consistent.
The "Potato della Sila" is stored indoors, in bins or in heaps not exceeding 4 meters in height. In this second case, the airing of the product must be foreseen through the creation of forced horizontal and vertical ventilation channels.
To facilitate the drying and scarring of the product, it is necessary to ventilate the room for 10-15 days from the collection through the opening of windows, or to favor the introduction of air through forced ventilation systems.
The "Potato della Sila" must be stored in the dark at room temperature for a period of maximum 8 months and in any case no later than April 30 of the following year, or in special cold rooms with a temperature between 5 ° and 10 ° C and humidity equal to 93-98% for a maximum of 10 months and in any case no later than 30 May.
Anti-sprouting treatments with chemical synthesis products are not allowed.
The cultivation of the "Sila Potato" can be carried out according to the methods of cultivation of organic agriculture and / or integrated agriculture, as required by EU and national regulations on the matter.
The production and packaging of the "Sila Potato" must take place in the territory referred to in art. 3 of this specification to safeguard quality because the transfer of the product outside the Silano Plateau, characterized by ideal temperatures and humidity for storage without the use of any type of chemical treatment, would generate a stress that would negatively affect the shelf life and therefore on the quality of the product.
Link with the environment
The sila potato is characterized and appreciated for its excellent culinary qualities, in particular as regards frying thanks to the high content of dry matter that the tubers grown on the Silano Plateau have. With regard to this aspect, an analysis was conducted on the Agria variety by comparing it with samples from other production areas. The results showed that the potato grown on the Silano Plateau has much higher levels of dry matter, therefore a better aptitude for frying, as well as a more marked typical flavor than other origins. The Sila potato is perceived as a quality product by the people surrounding the Sila Plateau (Cosenza - Crotone - Catanzaro - Piana di Sibari) who traditionally obtain their supplies directly from the producers. Particularly renowned in the markets of Sicily, Puglia and Campania which, during the harvesting periods, have maintained stable trade links since the 1950s. The conservation capacity and the maintenance of the organoleptic characteristics make the Sila potato historically widely used for winter supplies in all these areas.
The excellent reputation of the Sila Potato is also testified by the enormous success of the events and festivals on the topic, which attract a myriad of tourists, mainly from the regions mentioned above, who arrive every autumn on the plateau eager to taste the delicious tuber.
The soil and climate aspect of the territory where this product is grown takes on great importance. From a grain size point of view, the silane soils are mostly loose, tend to be sandy with a fine grain and therefore very permeable and easily workable; the pH results with a value between 5 and 6.5; finally, they are well endowed with organic matter, and therefore with natural fertility, which in some areas reaches values equal to 10.04%. From a pedological point of view, according to recent studies (it can be mentioned in this regard Lulli et al., 2002) it emerges that these characteristics are optimal for the cultivation of the potato.
From a climatic point of view, the Sila Plateau has an extremely dry climate in summer and cold in winter. The temperatures recorded show increasing values in the period between April and May, therefore ideal for sowing. The growth of the plants is also favored by the daily thermal excursion and by the prolonged radiation that allow to obtain a constant and slow growth and a final maturation of the plant suitable for obtaining a product suitable for long conservation.
Potato cultivation in Sila has a long and documented history. A first mention is found in the Statistics of the Kingdom of Naples of 1811.
In 1955 the "Silano Center of Multiplication and Selection of Seed Potatoes" (CE.MO.PA. Silano) was born with the task of promoting the spread of certified seed.
Some studies at the end of the 1980s (1988) attest that the Silano Plateau was among the largest production basins for seed potatoes, recording the absolute highest average size of the plants.
Potato cultivation has always been an important economic source for the Silane Plateau. Over the years, the Silane peasant families have continuously handed down the cultivation of the potato and, although the origins of its introduction are ancient, it is only from the last decades that a positive economic and productive system has developed around its cultivation.
From a "social" point of view, potato growing involves about 1,200 families. The production sector alone stands at a turnover of over 15 million euros, but if this is added to the figure related to transport, technical and accounting services, equipment, machines and plants, materials for processing, consumption of fuel, etc., the potato sector reaches the substantial figure of around 500 million euros.
From an economic point of view, these data reveal a fundamental source of income for local operators who, however, engaged in the production process themselves, guarantee the stable settlement of things and people in the Plateau, making it always alive in every period of the year.
The cultural link of the product to the territory is demonstrated by the festivals and events dedicated to it. Among these, we note the tradition and quality of the exhibitors:
- Camigliatello Silano, where the famous Potato Festival of the Sila has been celebrated since 1978, together with the Sila Potato and Agricultural Machinery Market Exhibition.
- Parenti, where since 1980 on the last Sunday of August, a great folkloristic and culinary event has been held on the Potato della Sila;
The cultural link is also underlined by the widespread use of the potato in numerous typical recipes of the local gastronomic tradition, such as "pasta, potatoes and eggs", "pasta and baked potatoes", "pasta, potatoes and zucchini", "pasta with wild fennel potatoes and meat ".
The control on the conformity of the product to the specification is carried out by a control structure in compliance with the provisions of articles 10 and 11 of EC Reg. N. 510/06.

All packaging must be made of material suitable for food use and sealed in such a way that the product cannot be extracted without breaking the package itself.
The sale of bulk product is not allowed, except for the case in which the single tuber is labeled according to the procedures provided for in this article.
The methods of presentation of the product upon release for consumption require that the following indications appear on the label, in clear and legible characters, in addition to the logo, the Community graphic symbol and related mention and information corresponding to the legal requirements. :
a) "Potato della Sila", with the possible added translation, followed, in full or in acronym (PGI), by the translatable expression "Protected Geographical Indication";
b) the name, the company name, the address of the manufacturing company and the processing and packaging center.
The name "Potato della Sila" is translatable.
The addition of any qualification not expressly provided for is prohibited.
However, the use of indications that refer to names or company names or private brands is allowed provided that they have no laudatory meaning or that are misleading the consumer, as well as other truthful and documentable references that are permitted by EU, national or regional legislation. and that do not conflict with the purposes and contents of this specification.
The product logo shows the word POTATO della SILA as the central element and in the foreground (in capital letters the words "POTATO" and "SILA", in lower case "della"). The writing is developed horizontally between two irregular lines: the upper line depicts three stylized trees on the left and, subsequently, a mountain with five peaks; the lower line supports the writing and ends with the design of a stylized wave with four points. Both lines begin and end in correspondence with the word POTATO from SILA. The typeface of the text is the blue "Galliard BT", "PANTONE Reflex Blue".
The color present in the logo is blue, "PANTONE Reflex Blue".
The maximum reduction limit of the trademark is 2,5 cm.
The products for the preparation of which the IGP Patata della Sila is used ”, also following processing and transformation processes, can be released for consumption in packs bearing the reference to the said denomination without affixing the Community logo, provided that:
- the protected denomination product, certified as such, constitutes the exclusive component of the product category to which it belongs;
- the users of the protected designation product are authorized by the owners of the intellectual property right conferred by the registration of the Patata della Sila PGI gathered in a Consortium in charge of protection by the Ministry of Agricultural, Food and Forestry Policies. The same consortium in charge will also register them in special registers and supervise the correct use of the protected name. In the absence of a protection consortium in charge, the aforementioned functions will be carried out by the MIPAAF as the national authority responsible for the implementation of Reg. 510/06.
